Ingredients
2 lb boneless, skinless chicken breasts or thighs
1 medium onion, finely chopped
2 cloves garlic, minced
3 cups chicken broth
1 can (10.5 oz) cream of chicken soup
1 cup milk
1 tsp dried thyme
1 tsp dried parsley
1/2 tsp black pepper
1/2 tsp salt, or to taste
1 cup frozen peas and carrots
1 can refrigerated biscuit dough, cut into small pieces
Instructions
Place the chicken breasts or thighs in the bottom of the slow cooker.
Add the chopped onion and minced garlic.
Pour in the chicken broth and add the cream of chicken soup.
Add the milk, thyme, parsley, black pepper, and salt. Stir gently to combine.
Cover and cook on LOW for 5–6 hours or until the chicken is tender and cooked through.
Remove the chicken and shred it with two forks, then return it to the slow cooker.
Stir in the frozen peas and carrots.
Cut the refrigerated biscuit dough into small pieces and gently place them over the chicken mixture.
Cover and cook on HIGH for about 45–60 minutes, or until the dumplings are fluffy and cooked through.
Gently stir and serve hot.
Tips
Chicken thighs can be used for an even richer flavor.
Avoid lifting the slow-cooker lid while the dumplings are cooking so they can steam properly.
For a thicker consistency, let the dish rest for a few minutes before serving.
Adjust the seasoning to your taste.
Serving
Serve hot in bowls with plenty of chicken, creamy sauce, vegetables, and fluffy dumplings. It’s a comforting meal that’s perfect for a cozy family dinner.
