Tips & Variations
Use boneless pork chops:
Boneless chops can be used instead of bone-in. They may cook faster, so begin checking them earlier to prevent overcooking.
Thicken the sauce:
For a thicker, gravy-like sauce, transfer the cooking liquid to a saucepan after cooking and simmer for a few minutes. You can also add a small amount of cornstarch slurry until the sauce reaches your preferred consistency.
Add garlic:
For extra flavor, add one minced garlic clove or a small spoonful of garlic paste to the sauce.
Make ahead:
Prepare the maple Dijon sauce the night before and refrigerate it. In the morning, simply pour it over the pork chops and start the slow cooker.
Adjust the flavor:
For a tangier sauce, add a little extra Dijon mustard or a small splash of apple cider vinegar. If you prefer more sweetness, add a little extra maple syrup before serving.
