1 lb (450 g) lean ground beef
3 medium zucchini, sliced lengthwise into thin strips or rounds
2 cups shredded mozzarella cheese
1 small yellow onion, finely diced
2 garlic cloves, minced
1 can (14 oz) crushed tomatoes or marinara sauce
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
¼ cup grated Parmesan cheese
Instructions
- Prepare the Zucchini
Arrange the zucchini slices on paper towels and lightly sprinkle with salt. Let them sit for about 10 minutes to release excess moisture. Pat dry thoroughly with additional paper towels. - Cook the Beef
Heat a large skillet over medium-high heat. Add the ground beef and diced onion, cooking until the beef is browned and the onion is tender. Drain any excess fat. - Make the Sauce
