Ingredients

For the Chocolate Cake

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup hot coffee (or hot water)

For the German Chocolate Frosting

  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 large egg yolks, lightly beaten
  • ½ cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1½ cups sweetened shredded coconut
  • 1½ cups chopped pecans

Optional Chocolate Buttercream (for smoother sides)

  • 1 cup unsalted butter, softened
  • 3½ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 2–4 tablespoons heavy cream or milk

Instructions

Step 1 – Prepare the Cake

Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans, or line them with parchment paper for easy removal.

In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until evenly combined.

Add the eggs, buttermilk, vegetable oil, and vanilla extract. Beat on medium speed for about 2 minutes until the batter is smooth.

Slowly pour in the hot coffee while mixing on low speed. The batter will be thin, but that’s exactly what creates a moist cake.

Divide the batter evenly among the prepared cake pans.

Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Step 2 – Make the Coconut-Pecan Frosting

In a medium saucepan, combine the evaporated milk, sugar, egg yolks, and butter.

Cook over medium heat, stirring constantly, for 10–12 minutes until the mixture thickens and coats the back of a spoon.

Remove from the heat and stir in the vanilla extract, shredded coconut, and chopped pecans.

Let the frosting cool for 30–45 minutes. As it cools, it will become thicker and easier to spread.

Step 3 – Optional Chocolate Buttercream

Beat the softened butter until creamy.

Gradually add the powdered sugar and cocoa powder.

Mix in the vanilla and enough heavy cream to create a fluffy, spreadable frosting.

Beat for another 2–3 minutes until light and smooth.

Step 4 – Assemble the Cake

Place the first cake layer on a serving plate.

Spread a generous layer of the coconut-pecan frosting over the top.

Repeat with the second layer.

Add the final cake layer and spread the remaining frosting over the top.

If using chocolate buttercream, frost the sides of the cake for a beautiful bakery-style finish. Otherwise, spread the coconut frosting over the entire cake for a traditional homemade look.

Decorate with extra chopped pecans and a sprinkle of toasted coconut if desired.

Tips for the Perfect German Chocolate Cake

  • Hot coffee deepens the chocolate flavor without making the cake taste like coffee.
  • Always let the cake cool completely before frosting.
  • Toast the pecans and coconut for an even richer flavor.
  • Use room-temperature ingredients for the softest cake texture.
  • Don’t rush the frosting—it needs time to cool and thicken before spreading.

This homemade German Chocolate Cake is wonderfully moist, rich in chocolate flavor, and topped with the classic coconut-pecan frosting that has made it one of America’s most beloved desserts for generations. It’s the perfect centerpiece for any celebration and a recipe you’ll come back to again and again.
