Ingredients
For the Meatballs:
- 1 lb (450g) ground beef (or beef/pork mix)
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan (optional)
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
For the Stew:
- 1 1/2 lbs (700g) potatoes, peeled and diced
- 1 small onion, chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 3 cups beef broth
- 1 can (14.5 oz) diced tomatoes (optional for tomato-based version)
- 2 tbsp tomato paste (optional)
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1/2 tsp paprika
- Salt & pepper to taste
👩🍳 Instructions
1️⃣ Make the Meatballs
- In a bowl, combine ground beef, breadcrumbs, egg, garlic, Parmesan, Italian seasoning, salt, and pepper.
- Mix gently and form into 1-inch meatballs.
(Optional: Brown meatballs in a skillet for 3–4 minutes to add extra flavor before adding to slow cooker.)
2️⃣ Assemble the Stew
- Add potatoes, carrots, celery, and onion to the slow cooker.
- Place meatballs on top.
- In a bowl, mix broth, diced tomatoes (if using), tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper.
- Pour mixture over everything.
3️⃣ Cook
- Low: 7–8 hours
- High: 3–4 hours
Potatoes should be tender and meatballs fully cooked (internal temp 160°F / 71°C).
4️⃣ Optional Finishing Touch
- Stir in 1/2 cup heavy cream for a creamy version.
- Garnish with fresh parsley.
- Serve with crusty bread.
📝 Tips
- For thicker stew: Mix 1 tbsp cornstarch + 2 tbsp cold water and stir in during last 30 minutes.
- Add peas or green beans during the last hour for extra veggies.
- You can substitute frozen meatballs to save time.
