This Slow Cooker Ground Beef and Stuffing Bake is an easy, hearty comfort-food recipe made with just a handful of simple ingredients. Seasoned stuffing mix adds plenty of flavor while helping create a tender, savory ground beef mixture.
Ingredients
2 lb (900 g) ground beef
1 box (6 oz / 170 g) seasoned stuffing mix
2 large eggs
1 cup (240 ml) water or beef broth
½ cup (120 ml) ketchup, plus extra for topping
Instructions
- Prepare the slow cooker: Lightly grease the inside of your slow cooker with cooking spray or a little oil.
- Combine the ingredients: Add the ground beef, seasoned stuffing mix, eggs, and water or beef broth to a large bowl.
- Mix: Gently combine everything until the stuffing is evenly distributed throughout the ground beef. Avoid overmixing.
- Transfer to the slow cooker: Place the mixture into the prepared slow cooker and shape it into an even loaf.
- Add ketchup: Spread the ketchup evenly over the top.
- Cook: Cover and cook on LOW for 5–6 hours, or until the center reaches 160°F (71°C).
- Rest: Carefully remove the meatloaf and let it rest for about 10 minutes before slicing.
- Serve: Slice and serve warm with mashed potatoes, vegetables, or your favorite side dishes.
Recipe Notes
Do not overmix the ground beef, as this can make the finished meatloaf dense.
Beef broth can be used instead of water for additional savory flavor.
Make sure the center reaches 160°F (71°C) before serving.
Letting the meatloaf rest before slicing helps it hold together better.
