Purple Red Cabbage & Blueberry Drink
Ingredients
- ½ small red cabbage, chopped
- 1 cup fresh or frozen blueberries
- 4 cups (1 liter) water
- Juice of 1 lemon
- 2–3 tablespoons honey (or sugar, to taste)
- Ice cubes (optional)
- Fresh mint and lemon slices for garnish (optional)
Instructions
- Add the chopped red cabbage, blueberries, and water to a pot.
- Bring to a boil, then reduce the heat and simmer for 20–25 minutes.
- Remove from the heat and let it cool slightly.
- Strain the liquid through a fine sieve, pressing the fruit and cabbage to extract as much juice as possible.
- Stir in the lemon juice and honey until dissolved.
- Chill in the refrigerator for at least 2 hours.
- Serve over ice and garnish with mint and lemon slices if desired.
Notes
- The lemon juice helps turn the drink a brighter purple due to the natural pigments in the red cabbage.
- Store in the refrigerator for up to 4–5 days in a sealed bottle.
- You can use sparkling water instead of some of the water for a fizzy version.
