Ingredients
For the Peach Filling
6 cups fresh peaches, peeled and sliced (or frozen peaches, thawed)
1 cup granulated sugar
1/2 cup brown sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
1 teaspoon vanilla extract
For the Cobbler Topping
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cold unsalted butter, cubed
1/3 cup boiling water
Instructions
Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
In a large mixing bowl, combine the peaches, granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Toss until the peaches are evenly coated.
Transfer the peach mixture to the prepared baking dish and spread evenly.
In another bowl, whisk together the flour, sugar, baking powder, and salt for the topping.
Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
Stir in the boiling water until a soft dough forms.
Drop spoonfuls of the topping evenly over the peach filling. It does not need to completely cover the peaches.
Bake for 40–45 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
Remove from the oven and allow the cobbler to cool for at least 15 minutes before serving.
