A Sweet, Refreshing Delight to Brighten Any Occasion
This vibrant fruit salad is a tribute to my nana’s recipe, a yearly favorite that I never managed to write down. Now, I’ve finally found one that closely resembles her masterpiece! Filled with colorful fresh fruits, light whipped cream, and a touch of sweetness, it’s perfect for any gathering or as a refreshing snack.
Ingredients:
For the Salad:
1 ripe mango, peeled and diced
2 bananas, sliced
1 kiwi, peeled and sliced
1 cup raspberries
1 cup strawberries, hulled and halved
1 cup pineapple chunks (fresh or canned)
For the Cream:
1 cup heavy cream
2 tbsp powdered sugar
1 tsp vanilla extract
Method:
Preparing the Fruit:
Prep the Fruit: Wash and peel all the fruits as needed. Cut the mango, banana, kiwi, and strawberries into bite-sized pieces. Set aside.
Making the Whipped Cream:
Whip the Cream: In a chilled mixing bowl, add the heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.
Assembling the Salad:
Layer the Fruit: In a large glass dish or bowl, start by layering the mango, banana, kiwi, raspberries, strawberries, and pineapple chunks in alternating layers.
Add the Cream: Once the fruit is layered, top it with the freshly whipped cream. Spread it evenly to cover all the fruits.
Tips for Perfect Fruit Salad:
Use Fresh, Ripe Fruit: The sweetness and flavor of the salad depend on using fresh, in-season fruit.
Make Ahead: This salad can be made a few hours in advance. Just add the whipped cream right before serving to keep it light and fluffy.
Customize Your Fruits: Feel free to add other fruits like grapes, blueberries, or peaches depending on what’s in season or your personal preferences.
Serve and Enjoy:
Serve this vibrant fruit salad at your next brunch, BBQ, or holiday meal. It’s a crowd-pleaser that’s both healthy and delicious—just like nana used to make!
