Mom’s Famous Cream Puffs

These Mom’s Famous Cream Puffs are light, golden, and crisp on the outside with a soft, airy center filled with fluffy whipped cream. They’re surprisingly easy to make and absolutely perfect for dessert, afternoon coffee, or a special family gathering. 😋
Ingredients
For the Cream Puffs
1 stick (8 tablespoons) unsalted butter
1 cup water
1 teaspoon vanilla extract
1 cup all-purpose flour
4 large eggs
1 tablespoon sugar
¼ teaspoon salt

2 cups heavy whipping cream
¼ cup powdered sugar
1 teaspoon vanilla extract

Powdered sugar, for dusting
Instructions

  1. Make the Dough
    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
    Add the butter, water, sugar, and salt to a saucepan over medium heat. Bring to a boil, stirring until the butter has completely melted.
    Remove from the heat and immediately stir in the flour. Mix vigorously until the mixture forms a smooth dough that pulls away from the sides of the pan.
    Return the saucepan to low heat for about 1–2 minutes, stirring constantly, to dry the dough slightly.
  2. Add the Eggs
    Transfer the dough to a mixing bowl and let it cool for a few minutes.
    Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla. The finished dough should be smooth, glossy, and thick enough to hold its shape.
  3. Bake
    Spoon or pipe the dough into small mounds on the prepared baking sheet, leaving space between each one.
    Bake at 425°F for 15 minutes, then reduce the temperature to 375°F (190°C) and bake for another 20–25 minutes, until puffed and golden brown.
    Do not open the oven door while they are baking, especially during the first 20 minutes, or the puffs may collapse.
    Turn off the oven, slightly open the door, and let the cream puffs sit inside for about 10 minutes.
    Transfer to a wire rack and allow them to cool completely.
  4. Make the Filling
    Beat the heavy whipping cream, powdered sugar, and vanilla until stiff peaks form.
    Cut each cooled cream puff in half horizontally or make a small opening on the bottom, then fill generously with the whipped cream.
  5. Finish
    Dust the tops with powdered sugar and serve immediately.
