Recipe Description
Hearty High-Protein Lasagna Soup combines all the comforting flavors of classic lasagna—savory tomato sauce, Italian herbs, pasta, cheese, and rich meat—in a warm, satisfying soup. This protein-packed version uses lean ground meat, beans or lentils, and a creamy cheese topping to create a filling meal that is perfect for family dinners, meal prep, or cozy winter nights.
It delivers the taste of traditional lasagna with less layering work and a lighter, spoonable texture.

Ingredients
Soup Base
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3–4 garlic cloves, minced
- 1 medium carrot, diced
- 1 bell pepper, chopped
- 1 lb (450 g) lean ground beef or turkey
- 1 cup cooked lentils (optional, for extra protein and fiber)
- 2 tablespoons tomato paste
- 1 can (28 oz / 800 g) crushed tomatoes
- 4 cups low-sodium chicken or vegetable broth
- 2 teaspoons Italian seasoning
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
Pasta
- 8 oz (225 g) lasagna noodles, broken into pieces
(or use whole wheat pasta for more fiber)
Cheese Topping
- 1 cup ricotta cheese
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons fresh parsley or basil, chopped
Instructions
1. Cook the Protein
Heat olive oil in a large pot. Add onion and cook for 2–3 minutes until softened.
Add garlic, carrot, and bell pepper. Cook another 3 minutes.
Add ground beef or turkey. Cook until browned, breaking it apart with a spoon.
Drain excess fat if needed.
2. Build the Soup Flavor
Add tomato paste and stir for 1 minute.
Add:
- crushed tomatoes
- broth
- lentils
- Italian seasoning
- basil
- oregano
- red pepper flakes
- salt and pepper
Bring to a boil, then reduce heat and simmer for 15 minutes.
3. Add Pasta
Add broken lasagna noodles.
Cook until pasta is tender, usually 10–12 minutes.
Stir occasionally to prevent sticking.
4. Prepare Cheese Mixture
Mix:
- ricotta
- mozzarella
- Parmesan
- herbs
until creamy.
5. Serve
Ladle soup into bowls.
Top with a spoonful of cheese mixture.
Allow it to melt slightly before eating.
Recipe Notes
- For a higher-protein version, use extra lean turkey, add more lentils, or increase the ricotta topping.
- For a lower-carb option, replace noodles with zucchini noodles or cauliflower pieces.
- The soup thickens as it sits because pasta absorbs liquid.
- Store pasta separately if making ahead to prevent it from becoming too soft.
Helpful Tips
1. Better Flavor
Brown the meat well before adding liquids. The caramelized bits add deep lasagna-like flavor.
2. Meal Prep Tip
Make the soup base ahead of time and add pasta only when reheating.
3. Freezer Tip
Freeze without noodles and cheese topping. Add fresh pasta when serving.
4. Creamier Texture
Add a splash of milk or extra ricotta before serving.
5. Vegetarian Protein Option
Replace meat with:
- lentils
- chickpeas
- plant-based protein crumbles
