Creamy, cheesy, and incredibly easy, these Crockpot Cheesy Potatoes and Kielbasa are the perfect comfort-food dinner. Tender potatoes, smoky kielbasa, and plenty of melted cheddar cheese come together in the slow cooker for a hearty meal the whole family will love.
Ingredients
2 lbs potatoes, peeled and cut into bite-size cubes
1 lb kielbasa, sliced into rounds
2 cups shredded cheddar cheese
1 can (10.5 oz) cream of chicken soup
½ cup sour cream
½ cup milk
1 small onion, finely chopped
1 tsp garlic powder
½ tsp onion powder
½ tsp paprika
½ tsp black pepper
½ tsp salt, or to taste
1 tbsp chopped fresh parsley, for garnish
Instructions
- Prepare the slow cooker: Lightly spray the inside of your crockpot with nonstick cooking spray.
- Add the potatoes and kielbasa: Place the cubed potatoes and sliced kielbasa into the slow cooker. Add the chopped onion.
- Make the creamy sauce: In a bowl, whisk together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, paprika, salt, and black pepper.
- Combine: Pour the creamy mixture over the potatoes and kielbasa. Stir gently until everything is evenly coated.
- Cook: Cover and cook on LOW for 5–6 hours or HIGH for 2½–3½ hours, until the potatoes are fork-tender.
- Add the cheese: Sprinkle the shredded cheddar cheese evenly over the top during the final 20–30 minutes of cooking. Cover again and allow the cheese to melt completely.
- Serve: Gently stir, garnish with fresh parsley, and serve hot.
Recipe Tips
Cut the potatoes into similar-sized pieces so they cook evenly.
For extra flavor, you can lightly brown the kielbasa before adding it to the crockpot.
Sharp cheddar gives the dish a stronger, richer cheese flavor.
Don’t overcook the potatoes, as they can become too soft and break apart.
Let the dish rest for a few minutes before serving so the sauce can thicken slightly.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Reheat gently in the microwave or on the stovetop until warmed through.
