Chinese Beef and Onion Stir-Fry

Ingredients:

1 lb beef sirloin or flank steak, thinly sliced against the grain
2 large onions, sliced into wedges
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon cornstarch
1 teaspoon sugar
1/2 teaspoon black pepper
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
2 tablespoons vegetable oil
1/4 cup beef broth or water
1 teaspoon sesame oil (optional)
Green onions, sliced for garnish

Directions:

In a bowl, combine the sliced beef with soy sauce, oyster sauce, cornstarch, sugar, and black pepper. Mix well and let marinate for 10–15 minutes.
Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat.
Add the marinated beef in a single layer and stir-fry for 2–3 minutes until browned but not fully cooked. Remove the beef and set aside.
In the same pan, add the remaining tablespoon of oil. Add garlic and ginger, and stir-fry for about 30 seconds until fragrant.
Add the sliced onions and cook for 3–4 minutes until they begin to soften and slightly caramelize.
Return the beef to the pan and pour in the beef broth or water. Stir everything together and cook for another 2–3 minutes until the beef is tender and the sauce thickens.
Drizzle with sesame oil if using, toss gently, and remove from heat.
Garnish with sliced green onions and serve hot with steamed rice or noodles.
