Ingredients
1 lb ground beef or turkey
1 small head cabbage, chopped
1 onion, diced
3 celery stalks, chopped
2 carrots, sliced
1 bell pepper, diced
3 cloves garlic, minced
1 can diced tomatoes (14–15 oz)
1 can tomato sauce (8 oz) or 2 tbsp tomato paste
6 cups beef or chicken broth
1 tsp paprika
1 tsp Italian seasoning
1/2 tsp black pepper
1 tsp salt, or to taste
1–2 tbsp olive oil if needed
Instructions
In a large pot, brown the ground beef over medium heat. Drain excess grease if needed.
Add onion, celery, carrots, and bell pepper. Cook 4–5 minutes until softened.
Stir in garlic and cook 30 seconds.
Add diced tomatoes, tomato sauce, broth, paprika, Italian seasoning, salt, and pepper.
Bring to a boil.
Add chopped cabbage and reduce heat to a simmer.
Cover and cook for 25–30 minutes, until cabbage and vegetables are tender.
Taste and adjust seasoning before serving.
