Baked Pineapple BBQ Chicken Thighs

Ingredients
8 boneless, skinless chicken thighs
1 cup BBQ sauce
½ cup pineapple juice
2 tablespoons brown sugar
1 tablespoon soy sauce
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon smoked paprika
8 pineapple rings (fresh or canned, drained)
1 tablespoon olive oil
Salt and black pepper, to taste
Fresh parsley, chopped, for garnish
Instructions
Preheat the oven to 400°F (200°C). Lightly grease a baking sheet or baking dish.
Pat the chicken thighs dry and season both sides with salt and black pepper.
In a bowl, whisk together the BBQ sauce, pineapple juice, brown sugar, soy sauce, garlic powder, onion powder, and smoked paprika.
Arrange the chicken thighs on the prepared baking sheet and brush generously with the BBQ mixture.
Place a pineapple ring on top of each chicken thigh and spoon additional sauce over the pineapple.
Bake for 30 minutes, then remove from the oven and brush with more sauce.
Return to the oven and bake for 10–15 minutes more, or until the chicken reaches an internal temperature of 165°F (74°C) and the pineapple is lightly caramelized.
For extra charred edges, broil for 2–3 minutes at the end of cooking.
Garnish with chopped parsley before serving.
Notes
Chicken breasts may be substituted, but cooking time may vary.
Fresh pineapple adds extra sweetness and caramelization.
For a spicy kick, add a pinch of red pepper flakes or a dash of hot sauce to the glaze.
