Crisp Autumn Nights Slow Cooker Roast

A cozy slow-cooker roast that’s tender, juicy, and packed with rich savory flavor. The beef cooks slowly until beautifully tender, surrounded by a glossy sauce and sweet, savory onions. It’s the perfect comfort-food dinner for a crisp autumn evening.

Ingredients

3–4 lb beef chuck roast

1 large yellow onion, sliced

4 cloves garlic, minced

2 cups beef broth

1 tbsp Worcestershire sauce

1 tbsp tomato paste

1 tsp salt

½ tsp black pepper

1 tsp dried thyme

1 tsp dried rosemary

1 tbsp olive oil

2 tbsp all-purpose flour, optional, for thickening the sauce

Instructions

  1. Prepare the roast: Pat the beef chuck roast dry with paper towels. Season all sides generously with salt, black pepper, dried thyme, and rosemary.
  2. Sear the beef: Heat the olive oil in a large skillet over medium-high heat. Sear the roast for about 3–4 minutes per side, until nicely browned.
  3. Prepare the slow cooker: Place the sliced onion and minced garlic in the bottom of the slow cooker.
  4. Add the roast: Place the seared roast on top of the onions.
  5. Make the cooking liquid: Whisk together the beef broth, Worcestershire sauce, and tomato paste. Pour the mixture around the roast.
  6. Slow cook: Cover and cook on LOW for 8–9 hours, or until the beef is extremely tender and easily pulls apart with a fork.
  7. Finish the sauce: Carefully remove the roast and let it rest for a few minutes. If you prefer a thicker sauce, transfer some of the cooking liquid to a saucepan and simmer it with the flour until slightly thickened.
  8. Serve: Spoon some of the onions and rich sauce over the roast. Serve warm with your favorite comfort-food sides.

Pro Tip

For the most tender results, cook the roast low and slow and avoid lifting the lid too often. The longer, gentle cooking time allows the beef to become incredibly tender.
