Crockpot Cabbage Roll Casserole

A comforting, hearty slow-cooker meal made with tender cabbage, seasoned ground beef, rice, and a rich tomato sauce. This easy casserole has all the cozy flavors of traditional cabbage rolls without the extra work of rolling each cabbage leaf.
🥘 Ingredients
1 lb (450 g) ground beef
1 small head green cabbage, chopped
1 small onion, diced
2 cloves garlic, minced
1 cup uncooked long-grain white rice
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes, undrained
2 cups beef broth
1 tbsp Worcestershire sauce
1 tsp paprika
1 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
1 tbsp olive oil
👩‍🍳 Instructions

  1. Brown the beef
Heat the olive oil in a skillet over medium heat. Add the diced onion and ground beef. Cook until the beef is browned and the onion is softened. Add the garlic and cook for another 30 seconds.
  2. Prepare the slow cooker
Add the chopped cabbage to the crockpot. Top with the browned beef and onion mixture.
  3. Add the remaining ingredients
Add the uncooked rice, tomato sauce, diced tomatoes, beef broth, Worcestershire sauce, paprika, Italian seasoning, salt, and black pepper. Stir gently until everything is evenly distributed.
  4. Slow cook
Cover and cook on LOW for 5–6 hours, or until the cabbage is tender, the rice is cooked, and the flavors have blended together.
  5. Check and serve
Give the casserole a gentle stir before serving. Taste and adjust the seasoning if needed. Serve hot with a little fresh parsley on top if desired.
    ❤️ Serving Suggestion
Serve this warm as a complete comfort-food dinner. A simple green salad or crusty bread makes a great side.
    💡 Tips
Chop the cabbage into similar-sized pieces so it cooks evenly.
Don’t add extra liquid unless needed; the cabbage and tomatoes release additional moisture while cooking.
If your slow cooker cooks particularly hot, start checking the rice and cabbage toward the earlier end of the cooking time.
For extra flavor, you can use a combination of ground beef and ground pork.
