Slow Cooker Meatball and Potato Stew

Ingredients

For the Meatballs:

  • 1 lb (450g) ground beef (or beef/pork mix)
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan (optional)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Stew:

  • 1 1/2 lbs (700g) potatoes, peeled and diced
  • 1 small onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cups beef broth
  • 1 can (14.5 oz) diced tomatoes (optional for tomato-based version)
  • 2 tbsp tomato paste (optional)
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt & pepper to taste

👩‍🍳 Instructions

1️⃣ Make the Meatballs

  1. In a bowl, combine ground beef, breadcrumbs, egg, garlic, Parmesan, Italian seasoning, salt, and pepper.
  2. Mix gently and form into 1-inch meatballs.

(Optional: Brown meatballs in a skillet for 3–4 minutes to add extra flavor before adding to slow cooker.)

2️⃣ Assemble the Stew

  1. Add potatoes, carrots, celery, and onion to the slow cooker.
  2. Place meatballs on top.
  3. In a bowl, mix broth, diced tomatoes (if using), tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper.
  4. Pour mixture over everything.

3️⃣ Cook

  • Low: 7–8 hours
  • High: 3–4 hours

Potatoes should be tender and meatballs fully cooked (internal temp 160°F / 71°C).

4️⃣ Optional Finishing Touch

  • Stir in 1/2 cup heavy cream for a creamy version.
  • Garnish with fresh parsley.
  • Serve with crusty bread.

📝 Tips

  • For thicker stew: Mix 1 tbsp cornstarch + 2 tbsp cold water and stir in during last 30 minutes.
  • Add peas or green beans during the last hour for extra veggies.
  • You can substitute frozen meatballs to save time.
