Pepper-Crusted Prime Rib Roast Recipe

Ingredients:
1 Prime Rib Roast (about 4-5 pounds)
2 tablespoons coarsely ground black pepper
2 tablespoons kosher salt
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
3 cloves garlic, minced
1 tablespoon olive oil
1 cup beef broth
1 tablespoon balsamic vinegar (optional)
Directions:

  1. Preheat the oven:
    Preheat your oven to 450°F (232°C).
  2. Prepare the herb crust:
    In a small bowl, combine the ground black pepper, kosher salt, rosemary, thyme, and minced garlic. Mix well.
  3. Season the roast:
    Rub the olive oil all over the prime rib roast. Coat the roast generously with the herb mixture, pressing it firmly onto the surface to form a crust.
  4. Roast the prime rib:
    Place the roast, fat side up, on a rack in a roasting pan. Roast in the preheated oven for 15 minutes. After 15 minutes, reduce the temperature to 350°F (175°C) and continue roasting for 1.5 to 2 hours, depending on the size of your roast and the desired doneness (125°F for rare, 135°F for medium-rare, or 145°F for medium). Use a meat thermometer to check for your preferred doneness.
  5. Rest the roast:
    Once the roast reaches your desired doneness, remove it from the oven and let it rest for at least 15-20 minutes before slicing. This helps the juices redistribute for a more tender and flavorful roast.
  6. Make the gravy (optional):
    While the roast is resting, pour the beef broth into the roasting pan to deglaze the juices. Heat the mixture over medium heat and stir, scraping up any browned bits from the bottom of the pan. You can also add balsamic vinegar for an extra depth of flavor. Let the gravy simmer for a few minutes until it thickens slightly.
  7. Serve:
    Slice the prime rib into thick slices and serve with mashed potatoes, roasted asparagus, and your homemade gravy.
