Brioche Donuts

Ingredients:
For the Dough:
500g all-purpose flour
7g instant yeast
100g sugar
2 large eggs
150ml milk, lukewarm
100g unsalted butter, softened
1 tsp salt

250ml heavy cream
100g cream cheese
3 tbsp powdered sugar
1 tsp vanilla extract
For Coating:
100g granulated sugar
Method:
Preparing the Dough:
Mix the Ingredients: In a large bowl, combine the flour, yeast, and sugar. Add the eggs, milk, and salt, and mix until a dough forms.
Knead the Dough: Turn the dough out onto a floured surface and knead for about 10 minutes, or until smooth and elastic.
Let it Rise: Place the dough in a lightly oiled bowl and cover with a damp cloth. Let it rise for 1-1.5 hours, or until doubled in size.
Frying the Donuts:
Shape the Donuts: Punch down the dough and roll it out to about 1-inch thickness. Using a donut cutter or two round cookie cutters, cut out the donuts.
Fry: Heat oil in a deep frying pan to 350°F (175°C). Fry the donuts in batches for about 2-3 minutes per side, or until golden brown. Remove and place on paper towels to drain excess oil.
Filling the Donuts:
Prepare the Filling: In a bowl, whip the cream with the cream cheese, powdered sugar, and vanilla extract until smooth and thick.
Fill the Donuts: Once the donuts have cooled slightly, use a piping bag to fill them with the cream mixture.
Coating the Donuts:
Coat in Sugar: Roll the freshly fried donuts in granulated sugar until fully coated.
