2 lbs (about 900g) potatoes (Yukon Gold or russet), peeled & thinly sliced
1 cup heavy cream
1Β½ cups shredded cheddar cheese
1 packet onion soup mix

Prep the potatoes β Peel and slice them thin (about ΒΌ inch thick for even cooking).
Layer in slow cooker β Lightly grease the slow cooker. Add a layer of potatoes, sprinkle some onion soup mix, drizzle a little cream, then add cheese. Repeat layers until everything is used.
Cook β Cover and cook:
Low: 6β7 hours
High: 3β4 hours
Potatoes should be fork-tender.
Finish & serve β Stir gently before serving for extra creaminess
