Gluten-Free Cherry Cobbler

This gluten-free cherry cobbler is the perfect cozy dessert — warm, juicy cherries bubbling under a golden buttery topping. It’s made with simple pantry ingredients and comes together easily for a comforting homemade treat everyone will love.
Ingredients
For the Cherry Filling
4 cups cherries (fresh or frozen, pitted)
½ cup granulated sugar
1 tbsp cornstarch
1 tsp lemon juice
½ tsp vanilla extract
For the Cobbler Topping
1 cup gluten-free all-purpose flour
⅓ cup brown sugar
1 tsp baking powder
¼ tsp salt
½ tsp cinnamon
½ cup cold butter, cubed
1 egg
2 tbsp milk
Instructions
Preheat oven to 180°C (350°F).
In a bowl, mix cherries, sugar, cornstarch, lemon juice, and vanilla.
Pour the cherry mixture into a greased baking dish or ramekins.
In another bowl, combine gluten-free flour, brown sugar, baking powder, salt, and cinnamon.
Cut in the cold butter until crumbly.
Add egg and milk, mixing just until combined.
Spoon the topping over the cherries.
Bake for 35–40 minutes until golden and bubbly.
Let cool slightly before serving.

Frozen cherries work perfectly — no need to thaw completely.
