Baked Cranberry Custard Cake

Ingredients

  • 2 cups fresh or frozen cranberries
  • 3/4 cup sugar (plus extra for topping)
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 2 cups milk
  • 3 large eggs
  • 1/4 cup melted butter
  • 1 tsp vanilla extract

👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking dish (like the one in your image).
  2. Spread cranberries evenly in the dish. Sprinkle a little sugar over them.
  3. In a bowl, whisk eggs and sugar until smooth.
  4. Add milk, melted butter, and vanilla, mixing well.
  5. Stir in flour and salt until you get a smooth batter.
  6. Pour batter over cranberries—they’ll float slightly.
  7. Bake for 40–50 minutes, until golden and set in the center.
  8. Let cool slightly, then dust with sugar if desired.
